You set the prices

The market price is a suggestion. Go above it and customers put things back; go under it and you lose money on every sale. Finding the line on each product is the actual game.

Every job is yours at first

Order stock, take the delivery, unbox it, price-gun it, stack the shelves, scan it through the till and count the change. Later you hire cashiers and restockers and stop touching any of it.

Grow the shop

Buy new licences, knock out walls, add aisles, freezers and a second checkout, and move into home delivery with your own van.

Shoplifters

They are in there. Cameras and a security guard cost money, and deciding when that becomes worth paying for is a real decision.
